Our Story

We started making our own hot sauce because the alternative — another mass-market bottle organized by flames — wasn't good enough. Here's what we built instead.

Our Story

This started the same way most things worth doing do: a stubborn refusal to settle. Grocery store hot sauces were fine — in the same way that a meal replacement bar is technically food. They got the job done. They didn't make you stop and taste anything.

The grocery shelf is organized by heat level, which tells you almost nothing useful. A pepper sauce rated 8 out of 10 flames could be vinegar with an afterthought of capsaicin, or it could be one of the most complex fermented sauces you've ever put on a plate. The number tells you about tolerance, not about flavor.

So we set out to do it differently. Small runs, real ingredients, and flavor as the primary question at every step — not as something we'd get to after we nailed the heat level. The heat matters. It just isn't the whole story.

The Process

Why small-batch matters, step by step.

01

Ingredient sourcing

Every pepper variety is selected for flavor first. We look for specific characteristics — fruitiness, acidity, structure — not just heat units. That starts at the source.

02

Small-batch fermentation

Most of our sauces go through a fermentation stage. Fermentation builds the kind of rounded, complex flavor you can't achieve by blending raw pepper mash with vinegar and calling it a day.

03

Flavor testing and balance

Before any sauce is finalized, it goes through rounds of tasting and adjustment. The goal isn't to hit a target heat level — it's to make something that tastes like it was built on purpose.

04

Short runs, fresh stock

We make in small quantities deliberately. Shorter shelf time means fresher sauce. You're not getting the bottom of a warehouse pallet — you're getting something made recently.
